AB The slaughtering process affects the quality of its end product - "meat". This is particularly true in the case of pork. The effects of driving, electrical and CO2 stunning and also vertical and horizontal bleeding out on pork quality is shown with reference to current technologies. The animal protection aspects of driving to the stunning bay, electrical and CO2 stunning and bleeding out are discussed and suggestions made to ensure that pig killing conforms to animal protection requirements. Some animal protection and meat quality aspects of the slaughter of cattle and small ruminants are also mentioned.
