TI Contamination Control of Beef: The Role of Electrical Stunning
QU WHO-Manuskript 1990
PT sonstiges
AB Electrical stunning is a convenient way to stun cattle. With appropriate head bail restraint, and accurate and controlled electrode placement, the system has been shown to be unequivocally humane (Devine et al. 1986). In addition because the stunning sequences are controlled by a microprocessor, other additional functions can be built in to the process, such as control of gates to the stunning box and gates further down the race leading to the stunner. It is also important to note that once workers become adapted to the electrical stunning system they do not wish to revert back to the old system of captive bolt stunning. In one plant, saving of meat, previously condemned to rendering through ingesta contamination, allowed a payback time of six months.
