AB In the literature on electrical stunning of poultry many experiments are reported dealing with the effects of different stunning methods on the electroencephalogram, blood pressure, heart rates and blood volume loss after venesection. Conclusions about the influence of stunning procedures on the blood losses are contradictory and only few results are available on the influences of these procedures on other quality aspects. In this paper experiments are described using water-bath stunning with different voltages. Blood volume losses in relation to time after stunning and venesection and the appearance of the oven-ready carcases were measured. Results indicate a reduction of bleed-out with increasing voltages and a colour difference between some surface areas of the carcases stunned at 75 and 200 Volt respectively.
