AB The poultry processing industry has developed against the background of manual operations. Problems are related to pre-slaughter handling and stunning of birds, the number of quality defects and the large variation in quality parameters of carcasses and meat. It is assumed that the short-term stress factors occurring during pre-slaughter handling are very important. In this respect research is required about alternative methods of processing, including - relation between physiological condition of birds after holding at optimal environmental conditions killing and product quality, - exquipment for holding, - equipment for immediate, humane killing, - automatic hanging of dead birds, - influences of delayed bleeding. It is concluded that many advantages can be expected to result from the proposed alternative methods of processing.
