AB An immunohistologic approach for the detection of tissues of the central and peripheral nervous system (CNS/PNS) was evaluated as pertaining to human BSE exposure risk and food labelling law enforcement. Marker proteins used were NSE (neuron specific enolase), GFAP (glial fibrillary acidic protein), and for the first time MBP (myelin basic protein), NF (neurofilament) and peripherin. All antibodies were successfully applied in non-heated samples. MBP gave positive reactions with the brain of ruminants (cow, goat, sheep) but not with porcine brain. Anti-peripherin labelled cells of the PNS but not cells of the CNS. In hear treated meat products, the anti-NF antibody gave by far the best results. In a blind-fold study a brain content of 1 %. could still be detected using anti-NF. The results of this study indicate that immunohistology could be developed to a future reference method for the detection of specified risk materials in meat products.
