AB The cholesterol-testkit "Enzym.BioAnalysis Cholesterin/R-Biopharm" is used as screening test for the detection of nerval tissues in meat products. Nerval tissues (esp. brain) should significantly increase the cholesterol content of meat products. The test is commonly used in a double analysis. Following aspects were investigated: Sensitivity, specifity, variation of results and stabilty of the test to detect nerval tissues in meat products. It was shown, that the test did not detect pigbrain at concentrations of 0.5% and 1% in comminuted raw meat or meat products. Spinal cord of pig was detected from 0.5% on. At low concentrations (spinal cord <1% resp. brain <5%) the values are variing a lot, so that there is an overlap between contaminated and pure samples. Therefore at least 10 runs of the test at one sample must be done and the data must be variafied by statistical routines (ANOVA etc.). A distinction between the addition of spinal cord or brain is not possible.
